INGREDIENTS

1/4 cup extra virgin olive oil

1 lb sweet Italian Sausage

2 bell peppers, sliced

2 yellow onions, sliced

1 tsp Kosher salt

1 tsp black pepper

1 tbl Italian seasoning

1/4 cup chopped basil leaves

4 garlic cloves, chopped

2 tbl tomato paste

1 c Marsala wine or chicken broth

1 (15 ounce) can diced tomatoes

DIRECTIONS

  • Heat the oil in a heavy large skillet over medium heat. Add the sausages and cook until brown on both sides, about 7-10 minutes. Remove from the pan and drain.
  • Keeping the pan over medium heat, add the Italian seasoning, basil and garlic, and cook for 2 more minutes.
  • Add the Marsala wine, tomatoes, and tomato paste and stir.
  • Add the peppers, onions, salt, and pepper and bring to a simmer.
  • Return the sausage to the skillet with the vegetables. Reduce heat to low and simmer 15 minutes, or until sauce is thickened.
  • Serve over pasta, mashed potatoes, or a hoagie roll.
